1st Day of Gluten-Free Cheer: Gluten-Free Snowman Pancakes
Meet your new favourite winter breakfast: Gluten-Free Snowman Pancakes!
Fluffy, festive, and almost too cute to eat, these pancakes bring a sprinkle of holiday magic to your morning, without any gluten worries. Stack them, decorate them, and watch smiles appear as quickly as the snowflakes fall. Let the cozy fun begin!
Ingredients (serves ~4 snowmen)

1 cup +2 tbsp Grain Zero Pancake & Waffle Mix
2 large egg
1/4 cup water (or adjust per package instructions)
1 Tbsp melted butter or coconut oil
Chocolate chips, dried cranberries or Smarties (for snowman buttons, eyes and smile)
4 halved pieces of orange Smarties for the snowman nose
4 thin strips of fruit leather or licorice (for snowman scarf)
Maple syrup, whipped cream, or powdered sugar for serving
Non-stick spray or a little butter/oil for the pan
Instructions
Mix the batter: In a medium bowl, whisk together the Grain Zero mix, egg, and water until smooth. Let stand for 1–2 minutes to hydrate.
Heat the pan: Preheat a non-stick skillet or griddle over medium-low heat. Lightly grease it with butter/oil or non-stick spray.
Form the snowmen:
Pour ~⅓ cup batter for each large “body” pancake — you’ll need 2 body pancakes per snowman (one larger for the bottom, one smaller for the head). Option: For added effect, you can make a tiny “hat” pancake too.
Turn once when the sides appear cooked and the bottom is golden brown (about 2-3 minutes), then flip and cook 1-2 minutes more until golden and cooked through. Transfer to a plate and keep warm (cover loosely with foil or place in a low oven).
Assemble the snowmen:
On each serving plate, stack the larger pancake bottom, then the smaller pancake for the head.
Use the 2 mini chocolate chips for the eyes.
Place the carrot piece pointing outward for the nose.
Use the 4 small chocolate chips (or M&Ms) vertically down the body pancake as buttons.
Wrap the thin strip of fruit leather or licorice around the neck area as a scarf.
Serve: Drizzle with maple syrup, add a dollop of whipped cream on the side (or on top for “snow”), and/or dust with powdered sugar for a snowy effect.
Tips & Variations
Colourful scarf: Use a thin fruit-roll or colored licorice strip for the scarf—makes it more fun for kids.
Hat & arms: If you want to get extra creative, cook a third small pancake for a “top hat” and use 2 gluten-free pretzel sticks as “arms.”
Dairy-free option: Use coconut oil instead of butter and a non-dairy whipped topping.
Kid-friendly help: Let the kids help place the eyes/buttons & scarf—fun for a holiday family activity.
