Gluten-Free Mini Muffins, Four Ways (Using Grain Zero Muffin Mix)

If you’re looking for a quick, easy, and delicious way to make gluten-free snacks or brunch bites, Grain Zero’s gluten-free muffin mix is a fantastic pantry staple. Whether you have guests coming over or just want to meal prep a batch of flavourful, healthy muffins, this recipe gives you four creative mini muffin variations using one base mix.




We’re dividing the batter into four unique flavours:

  • 🫐 Blueberry Lemon

  • 🌶️ Roasted Red Pepper, Turkey & Cheddar Cheese

  • 🫒 Olive Tapenade

  • 🍎 Apple Spice and Raisin (using Grain Zero’s Apple Spice and Raisin Granola)


Let’s get baking!


The Base Muffin Recipe

Ingredients:

  • 1 package Grain Zero Gluten-Free Muffin Mix

  • 3 large eggs

  • 1/4 or 1/2 cup water for desired batter consistency

Makes: 48 mini muffins (or 12 per flavour)

Directions:

  1. Preheat your oven to 350°F (175°C) and grease or line a mini muffin tin.

  2. In a large bowl, combine the muffin mix, eggs, and water. Stir until just combined — do not overmix.

  3. Divide the batter equally into 4 small bowls.

  4. Add the mix-ins for each flavour (see below).

  5. Fill mini muffin cups about 3/4 full with the different batters.

  6. Bake for 12–15 minutes or until a toothpick inserted in the centre comes out clean.

  7. Cool slightly before serving. Enjoy warm or at room temperature! These muffins have no preservatives and have a shelf-life of 3 days. To extend the shelf-life, these muffins store well in the freezer.

1. Blueberry Lemon Mini Muffins

A sweet and zesty treat, perfect with tea.

Add to one portion of batter:

  • 1/4 cup fresh or frozen wild blueberries (tossed in a bit of gluten-free flour)

  • Zest of 1 small lemon

  • Optional: 1 tsp lemon juice for extra zing

Top with: A sprinkle of turbinado sugar before baking for a crunchy top.

2. Roasted Red Pepper, Turkey & Cheddar Mini Muffins

Great for breakfast or a protein-packed snack.

Add to one portion of batter:

  • 1/4 cup finely chopped roasted red pepper (patted dry)

  • 1/4 cup cooked turkey breast, chopped or shredded

  • 1/4 cup grated old cheddar cheese

  • Pinch of dried or parsley

Top with: More cheddar cheese for a crusty cheese crust.

3. Olive Tapenade Mini Muffins

A Mediterranean-inspired bite-sized treat.

Add to one portion of batter:

  • 2 tbsp finely olive tapenade

  • Pinch of oregano

Top with: A light drizzle of balsamic glaze and a micro-basil leaf, if you're feeling fancy.

4. Apple Spice & Raisin Mini Muffins (Using Grain Zero Apple Spice & Raisin Granola)

Warm and comforting with autumn vibes.

Add to one portion of batter:

  • 1/4 cup Grain Zero Apple Spice & Raisin Granola

Top with: A sprinkle of cinnamon sugar on top before baking.
