The holidays are all about comforting flavours, cozy gatherings, and a little culinary magic, and these Gluten-Free Stuffing Balls check all the boxes. Picture your favourite classic stuffing, packed with savoury herbs, onions, and just the right amount of buttery goodness…then rolled into perfectly bite-sized balls that are easy to serve, fun to eat, and completely gluten-free.

Ingredients

  • 2 cups Olivia's Gluten Free Stuffing

  • 2 tablespoons unsalted butter (or olive oil for dairy-free)

  • 1 small onion, finely chopped

  • 2 celery stalks, finely chopped

  • 2 garlic cloves, minced

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon dried thyme

  • ½ teaspoon dried rosemary

  • ¾ cup gluten-free chicken or vegetable broth, hot

  • 2 large egg, lightly beaten (or flax egg for vegan: 1 tbsp ground flax + 3 tbsp water)

  • Optional: ½ cup dried cranberries and or ¼ cup chopped toasted pecans for extra crunch


Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or line a baking sheet with parchment paper.

  2. Prepare the aromatics: In a skillet, melt butter over medium heat. Add onion, celery, and garlic, and sauté for 5–7 minutes until softened. Season with salt, pepper, thyme, and rosemary.

  3. Mix stuffing base: In a large bowl, combine the gluten-free bread cubes, sautéed vegetables, dried cranberries, parsley, and pecans (if using). Mix well.

  4. Add moisture and binder: Pour in the hot broth and gently mixing until the bread cubes are moistened but not soggy. Adjust seasoning if needed. Allow mixture to rest and absorb the liquid to rehydrate the breadcrumbs.

  5. Once the mixture has absorbed the liquid and the bread crumbs have soften, add in beaten egg and mix.

  6. Form balls: Using your hands, shape the mixture into 2-inch balls and place them on the prepared baking sheet.

  7. Bake: Bake for 20-25 minutes, or until the balls are golden brown and slightly crisp on the outside.

  8. Serve: Serve warm as a festive side dish or appetizer. Perfect alongside turkey, chicken, or a holiday roast.

  • Make ahead: You can assemble the balls a day ahead, refrigerate, and bake just before serving.

  • Extra flavour: Serve with gluten-free gravy or cranberry sauce.

  • Vegan option: Replace butter with olive oil and egg with a flax egg as mentioned above.
