Ingredients

Serves 4

For the Noodle Base:

  • 125 g Roland Rice Vermicelli Noodles

  • Hot water (for soaking)

For the Egg Roll Filling:

  • 1 tbsp sesame oil (or neutral oil)

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 small onion, thinly sliced

  • 1/2 head green cabbage, finely shredded (about 3 cups)

  • 1 medium carrot, grated or julienned

  • 1/2 red bell pepper, thinly sliced (optional)

  • 1/2 lb (225 g) ground pork, chicken, turkey, or tofu

  • 2 tbsp gluten-free tamari or coconut aminos

  • 1 tbsp rice vinegar

  • 1 tsp honey (optional)

  • Salt and pepper, to taste

  • Crushed red pepper flakes or sriracha (optional, for heat)

For Garnish:

  • Sliced green onions

  • Toasted sesame seeds

  • Extra tamari or chilli garlic sauce on the side

  • Lime wedges (optional)

Instructions

1. Soak the Vermicelli

Place Roland rice vermicelli noodles in a large bowl. Cover with hot water and let soak for 5–7 minutes, or until softened. Drain and rinse under cold water. Set aside.

2. Cook the Protein

In a large skillet or wok over medium-high heat, add a bit of oil and cook your ground meat (or tofu) until browned and fully cooked. Remove from the pan and set aside.

3. Sauté the Aromatics

In the same pan, add sesame oil. Sauté the garlic, ginger, and onion for 1–2 minutes until fragrant.

4. Add the Veggies

Add the shredded cabbage, carrot, and bell pepper. Stir-fry for 3–5 minutes until slightly softened but still vibrant.

5. Bring It All Together

Return the cooked protein to the pan. Add tamari, rice vinegar, and maple syrup. Toss to combine well, and season with salt, pepper, and chili flakes if desired.

6. Add the Vermicelli

Toss in the softened vermicelli noodles. Stir everything together until well-mixed and warmed through. The noodles will soak up the sauce and bring everything together into one flavourful bowl.
