Reserve 1/2 cup pasta water, to thicken the sauce as needed
Instructions:
Cook the Rice Pasta: Bring a large pot of salted water to a boil. Add the rice pasta and cook according to the package instructions (usually around 7-9 minutes). Once cooked, drain the pasta and set it aside. Don’t forget to save about 1/2 cup of pasta water for later, just in case you need to loosen the sauce.
Sauté the Onions, Garlic and Mushrooms: In a large skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until softened and fragrant.
